The Fleur de Sel is a very thin layer of salt that forms on the surface of the evaporation rafts of a saline solution (brine) during the crystallization process. This phenomenon has occasion between sunset and sunrise in summer times due to thermal contrast, which results in small crystals enriched with Magnesium, Calcium and Low Sodium. Thus obtaining a Hyposodic salt with a composition of more 100 Essential Mineral Nutrients.
The extraction of this salt is done manually and artisanal, its not subject to industrialization, washing or grinding.
